Red wine should actually be served around 15-18"C depending on its body. If the room temperature in Hong Kong is 25"C, red wine will normally filled with fruit flavours. Those little delicate flavours i.e. floral, spices, mineral will be masked and the wine becomes bold. So, try to chill your red wine around 15 minutes before serving next time. You will find the wine structure is different.
